Coconut and Pineapple Ice Cream – Pina colada


Pina Coladas are one of my favourite drinks! So I figured what better flavour for ice cream?!


What you’ll need:

- 1 can Coconut milk 

- 3 cups of pineapple (chopped)

- 1 cup of nutriwhip (or any other dairy free substitute)


In a food processor add the 3 cups of pineapple and blend (not till smooth, it’s nice to have small bits of pineapple throughout the ice cream)

Mix the coconut milk, nutriwhip and blended pineapple

Assemble your ice cream maker (make sure your freezer bowl has been in the freezer for at least 24hrs)

Pour mixture into the ice cream maker, turn on and let churn for 40 mins

After the 40 mins, if it is not frozen enough for you just put it in the fridge for another 20 min

Scoop into a serving dish and enjoy!
